Here's a quick and easy pancake recipe.. divide it in 1/2 for one serving. multiply it for more...
2 c. flour
2 eggs
2T sugar
2T oil
2 1/2t baking powder (about 1T)
2/3-1 c. milk
1. mix together and spoon into warm skillet.
2. when surface of pancake is bubbly turn cake. check cake after 15 or so seconds... after a few you'll be able to tell when they're done.
3. butter & syrup and enjoy!
tips:
a. amout of milk will effect thickness of batter & thus thickness of pancake.
b. add a the juice of a squeezed lemon for a fresh flavor
c. after first spooning pancakes into skillet drop fresh blueberries into the moist batter. other small berries are good too.
d. an easy way to turn a one-night stand into a 3-or-4-night stand...
