Ok, so I'm having a Lost part on Wednesday and am cooking dinner. I made this recipe once and it was delicious:

Apricot Brandied Chicken Breasts
4 whole boneless fryer breasts
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon tarragon leaves, crushed
1/4 cup butter
1/2 cup apricot brandy
3/4 cup chicken broth
1/2 cup sour cream

Preheat a large skillet over low heat and melt the butter in it.

Meanwhile, in a shallow dish, sift together the flour, salt, pepper and tarragon. Add the chicken, one piece at a time, and dredge to coat. Add the chicken to the skillet and cook for 10 minutes on each side or until the chicken is browned.

Add brandy and chicken broth. Stir and then let simmer for 10 more minutes or until the chicken is fork-tender. Remove the chicken to a warm platter.

Add the sour cream to the skillet and stir to warm. Pour the warm sauce over the chicken and serve immediately.

Anyway, I don't remember what I served with it. I asked a friend to bring salad; any ideas on other sides (is rice ok?).

Sounds fairly tasty [you know me].

Rice would work well because it will soak up your tasty sauce.

I like apricots. We have a friend who makes this delicious Baked Apricot - Brie thing. Its good. SQ might know the recipe...

So, do you say hay-pricot or aw-pricot?

The brie dish:

Unwrap the brie, put in a glass baking dish. Sprinkle top with brown sugar.
Bake within the oven at 400ish or 425 until sugar carmelizes.

Take out of oven, top with apricots, eat with apples. Yum!

I think thats all there is to it. Thats from memory, so you may want to check the internet to see if I forgot anything.

i persoanlly love quinoa with apricots. just chop some up (dried) and cook with the grains. they plump up and add a nice sweetness to everything. i think it would be good with the chicken dish as well, if you want to try something other than rice.

i think i will be trying this brie recipe. do you ever add walnuts to the mix? i bet they would go well...hmmm...hungry....lunch time....

Wow, that sounds great! I love some brie, too :) You don't eat it with crackers or anything, though?

007, I think I'll go with rice. It's just not as colorful as I'd like, but whatever. I'm sure it'll taste good.

You can eat it with whatever you like. I liked it with apples.

if you want colorful rice, buy some passion rice. it is a beautiful purple.

well...the tv is freaking sweet....i recommend getting one if you haven't. everything looks great on it. (well at least the High Definition stuff does...).
its alot like sitting in a bar with a giant tv in front of you.

haven't watched much football on it. watched last night's game.

and video games are freakin sweet. they are monstrous!

Zero just got a huge tv. It is definitely pretty sweet. Kinda makes me dizzy though if watching a sporting event. Maybe I shouldn't drink so much!
