Mmmmm... I won't be spending this Thanksgiving with my folks so I'm already thinking about what I'll be missing at home tomorrow. My mom always makes these mashed sweet potatoes covered in butter and marshmallows... mmmmmm. :)
But my favorite has to be the delicious turkey and stuffing all covered in a pool of hot gravy. I put gravy on everything, so maybe gravy would be my favorite dish.

my grandma makes this awesome stuffing with ground beef and about a million other ingredients...i've never asked cause it would take away the mystery of its awesomeness.
okay, i'm hungry. lunch time!
My Mom is the Queen Of Pies, so that's what I'll be missing the most this holiday. Although, SQ makes a pretty mean cheesecake from scratch. I'm drooling already...

For some reason we always seem to have at least three different pies and cheesecakes floating around the table after dinner. I like trying a little bit of each, but nothing beats a thick slice of cheesecake with graham cracker crust topped with sweet strawberry compote. Lawdy Lawdy.
I just drooled a little on my keyboard.

Does anyone do anything special to prepare the turkey? I've always wanted to try the beer can method ever since I heard about it. I think you cook the bird on top of an open can of beer or something :)
And I have also pledged to someday do a turducken :D
A turducken ("TURkey-DUck-chiCKEN") is a de-boned turkey stuffed with a de-boned duck, which itself is stuffed with a small de-boned chicken.

My favorite dish has to be 007 moms pies :> they rock my world. Next to that though I love a good green bean casserole although its hard to top a good giblet gravy.
My family always cooks our turkey in the horno (an Indian bread oven) and it is awesome. Never have I had turkey so juicy.
The beer can trick I thought was for chicken. In Texas they call it the dancing chicken. You open the beer and put it inside the turkey and stand it up so the beer doesn't come out. Then as the beer boils it moisturizes the chicken and it dances....
Regardless of how you cook your turkey make sure to soak it in a brine first. That will ensure a like juicy turkey. TRUST ME IT WORKS!!

For the best turkey in the midwest I suggest getting something free range.
Shelton's is a personal favorite of mine.
Also, I guess it's a bit late for this T/g, but I recomend thawing the bird an extra day in advance and soaking it in brine for 24 hours before baking. I usually fill a big cooler with water, add enough salt until it tastes like the ocean and let'er soak.
It adds an extra depth of seasoning to the meat and will help prevent it from getting dry during those long baking times.
