Because I got offered a better one: I'll be teaching high school English again :) I thought I'd had enough, but I found that I missed my classroom. I also found that my current job was entirely too unstructured and and job expectations were far too vague for me to feel comfortable. So, even though these people are nice, I have to quit my job after less than three months. Does anyone have any ideas about how I can do this gracefully? I'm at a loss...
Tell them that you're going to the bathroom, then never come back again. Make sure no one's looking, and just run for it!
(I actually worked somewhere where someone did this.)

Hmmm. Just 3 months? I would give them a couple weeks notice and explain that a better opportunity came along that fit your professional goals. You could thank them for the opportunity if you don't want to feel like a jerk.
Though Paul's idea may be more fun. You could do it however you like.
I've met individuals who took a break and never came back.

Seriously now... I agree w/ SQ. Two weeks notice is always good. But, when you give notice, be prepared for them to say you might as well leave today. Usually only asshole companies do that, but sometimes it's company policy.
Otherwise, I wouldn't feel bad about leaving after 3 months. It happens all of the time, and if you're leaving, they'd probably rather get on with the process of finding the next person as soon as they can. Plus, work-at-will is normal employee/employer relationship. As long as it is profitable and works for both parties, cool. Otherwise, two weeks notice and you're on your way. No blame for that.

Someone did this to me on their third day of work. They said they were going to take a shit and then they never came back!

don't worry about it. i am sure you will handle it just fine. only jerky employers will begrudge you an opportunity you feel the need to take. and who could be upset that you are going back into teaching - we need all the good teachers we can get.

I worked at a movie theater with this guy who had been there for 2 or 3 years... his first job i think... he was asking the manager questions all day about "hypothetically, what's the policy surrounding someone quitting?" and crap like that. Then, half way through the 9pm shows he tore his little bow tie off, threw it to the ground, screamed, "I JUST CAN'T TAKE IT ANYMORE!" and stormed out the door.
It was one of the most hilarious things I've ever seen.

Congrats on the new job!
I think 2 weeks is fine. Especially because you're leaving to do something you truly enjoy. They should be happy for you unless you work for a bunch of jerks. Sad that you're leaving but happy that you're doing something you want.
