mmmmm, so i'm going to go pick up some morels tomorrow. there's a little fruit store in the burbs where i put my name on a list for morels a year and a half ago. and finally my ship has come in!

i haven't had morels in years, and never cooked them myself. anyone have any good recipes?

My dad has literally found 40+ pounds of mushrooms so far this year. I can't cook enough to keep up with the ones he brings me! Maybe I'm spoiled... We usually just do the fried way but they are good sauteed in butter with onions as well. You can even saute them in some butter with green peppers, onions, and garlic and toss them on a juicy slab of steak. Pretty tasty!

our family has always dredged them in cornmeal with salt and pepper and fried them in oil. you can add any seasoning if you like.

the mushroom grower that i purchased from when i lived up in kingston always said about any mushroom, saute in butter and garlic. its had to go wrong.

personally i like a mixture of good olive oil and butter, garlic, nutmeg and salt. yum! use a hot pan, and don't crowd them. only one layer and you are good.

if you want to enjoy them in a dish, try a risotto where the creamy goodness can spread the morel flavor all around. okay, i'm hungry for morels now with none to be found. you better enjoy those! :binge:
