Slam called me last night while I was busy bottling some homebrew beer. I'm working on a honey ginger ale, and a regular american steam beer. Thought I'd post some pics.

Check it out, 11 gallons of beer and 5 gallons of apple cider, brewing in my closet...

I know SQ would be all over that Cider. Have you had much luck with ciders before?

What is your favorite home brew that you have made thus far?

Is that stuff ready for consumption? That brew you brought on the float trip was pretty good. And by good I mean it was tits.

Slam keeps feeding me some sort of moonshine he makes under his bed with nailpolish lacquer and rubber cement. :(

What is your favorite home brew that you have made thus far?

My favorite is the honey ginger brew. It's half light honey, half malt, so it's kind of between being a mead and a beer, plus it has lots of ginger in it. It's a recipe that I've been working on for a few batches already.

I've never done a cider before. Hopefully this one will come out. I tried a bunch when I bottled it, and it tasted good, and had plenty of alcohol. I made it with my girlfriend, who was curious about brewing, but doesn't like the taste of beer. It was really easy, just apple juice, flavoring (I used ginger, but lots of people use cinnamon), and champagne yeast for fermenting. The only trick with cider is that you have to get juice without preservatives, which is generally not sold at grocery stores. I used gallon bottles of cider from the farmer's market here.

Otherwise, all of the beer I've made has been pretty good. The quality seems to depend a lot more on brewing temperature and timing than ingredients.
